Yasika Omelet

Ingredients

¼ cup left over beef pot roast

2 tbsp. butter

2 bacon slices cooked and crumpled

1 cooked sausage patty or two sausage links cut up

1 slice deli ham

1/8 cup spring onion sliced

1/8 cup sweet or red onion chopped

1/8 cup sweet bell peppers chopped

1/8 cup tomatoes chopped

¼ cup sharp cheddar cheese

3 eggs

1/8 cup milk

Salt and pepper to taste

Dried cilantro

Preparation

Sauté onions and peppers in ½ tbsp. butter on medium until soft. Beat eggs with milk. Melt 1½ tbsp. butter in 12 in skillet pan. Pour egg into pan layer all ingredients evenly, as you would a pizza with the cheese being last.

Cook on low covered for about 15 minutes or until set and cheese is melted. Plate and flip your omelet. Sprinkle with cilantro for garnish. Add salt and pepper. Can be served with salsa and sour cream if desired.
